Und der Boden? Der liefert bis zu seiner Ersch\u00f6pfung. Eine Reise zur Idee, den Boden wieder durchatmen zu lassen, hin zur Erkenntnis, dass sich Mut lohnt.<\/p>\n\n\n\n<p>Der Boden steht vor einem Burnout. Seine leisen Hilfeschreie haben wir lange ignoriert. Als er weniger Ertrag brachte, d\u00fcngten wir ihn. Die Temperaturen stiegen. Als er austrocknete, gossen wir ihn. Das Wasser wurde knapp. Als er Sch\u00e4dlinge eindringen liess, vergifteten wir ihn.<br>Schliesslich sollen die Gestelle in den Gesch\u00e4ften voll sein, die Auswahl gross, das Gem\u00fcse perfekt, das ganze Jahr. Niemand soll hungern, niemand vom Ausland abh\u00e4ngig sein. Die Vorschriften sind da, die Direktzahlungen auch, der Druck ist immens. Aus vorgegebenen,<br>traditionellen Mustern ausbrechen ist schwierig, unangenehm, unsicher. Matthias Hollenstein tat es trotzdem, ordnete das Feld neu und durchbrach einen Kreislauf, der in der Landwirtschaft seit Jahrzehnten gepflegt wird.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Und der Boden atmete tief durch.<\/h2>\n\n\n\n<p>Der gelernte Polymechaniker schlug vor \u00fcber zehn Jahren auf einem Demeter-Betrieb einen neuen Bildungsweg ein. In seiner Ausbildung zum biodynamischen Landwirt merkte er schnell, da geht noch mehr, da muss noch mehr gehen. Noch w\u00e4hrend seiner Ausbildung besuchte er unz\u00e4hlige Bauernh\u00f6fe und bei fast allen sei der Boden kaputt gewesen, sagt er. Bedeutet: durch die intensive Bearbeitung sind die B\u00f6den verdichtet, ausgelaugt und voller Schadstoffe. Auch das Bundesamt f\u00fcr Umwelt schreibt: \u00abEs gibt in der Schweiz keine schadstofffreien B\u00f6den mehr.\u00bb Der Grund daf\u00fcr liegt nicht nur im Ausbringen von zu viel G\u00fclle (S. 44) und der Behandlung<br>mit Pestiziden, sondern auch daran, dass der Boden Zeit braucht, um die Schadstoffe abzubauen.
