Das Interesse an regenerativen Anbaumethoden, die \u00d6kologie und Wirtschaftlichkeit verbinden, w\u00e4chst. Waldg\u00e4rten, auch bekannt als «Food Forests», bieten in dieser Hinsicht einen zukunftsweisenden Ansatz: Sie kombinieren essbare Geh\u00f6lze, Kr\u00e4uter, Stauden und Pilze in einem vielschichtigen und nachhaltigen Anbausystem. Auf Basis der Permakultur entstehen dabei produktive \u00d6kosysteme, die auf Selbstregulation, Vielfalt und geschlossene Kreisl\u00e4ufe setzen.<\/p>\n\n\n\n

Das «Prinzip Waldgarten»<\/h2>\n\n\n\n

Waldg\u00e4rten sind mehrschichtige Anbausysteme, die sich an der Struktur nat\u00fcrlicher W\u00e4lder orientieren. Dabei werden verschiedene Pflanzenebenen kombiniert \u2013 von hohen B\u00e4umen \u00fcber Str\u00e4ucher bis hin zu Kr\u00e4utern und Bodendeckern. Auch Kletterpflanzen und Pilze k\u00f6nnen integriert werden. Das Ziel ist ein stabiles, resilientes System, das das Licht und den Raum optimal nutzt und auf nat\u00fcrliche Weise N\u00e4hrstoffe zirkulieren l\u00e4sst, Wasser speichert und den Boden sch\u00fctzt.<\/p>\n\n\n\n

Im Zentrum eines Waldgartens stehen essbare Pflanzen, das hei\u00dft Obst- und Nussb\u00e4ume, Beerenstr\u00e4ucher, Kr\u00e4uter, Wurzelgem\u00fcse und Speisepilze. Diese k\u00f6nnen entweder frisch vermarktet oder zu hochwertigen Produkten weiterverarbeitet werden.<\/p>\n\n\n\n

In begrenztem Ma\u00dfe werden auch nicht essbare Pflanzen eingebracht \u2013 etwa solche, die Stickstoff binden, Insekten f\u00f6rdern oder Mulchmaterial liefern. Sie erf\u00fcllen eine unterst\u00fctzende Funktion im \u00d6kosystem Waldgarten, stehen aber nicht im Vordergrund der Nutzung.<\/p>\n\n\n\n

Waldg\u00e4rten \u2013 eine spezielle Form des Agroforsts<\/h2>\n\n\n\n

W\u00e4hrend Agroforst im weiteren Sinne die Integration von Geh\u00f6lzen in landwirtschaftliche Nutzung meint \u2013 etwa durch Baumreihen auf \u00c4ckern oder Weiden \u2013, verfolgt der Waldgarten ein dichteres, produktionsintensives und st\u00e4rker auf Selbstregulation ausgerichtetes System. In der Praxis werden die verschiedenen Systeme meist miteinander kombiniert.<\/p>\n\n\n\n

Typische Vegetationsschichten eines Waldgartens<\/h2>\n\n\n\n

In einem Waldgarten werden haupts\u00e4chlich drei Schichten unterschieden: die Baumschicht, die Strauchschicht und die Krautschicht. Einige Quellen erw\u00e4hnen auch noch die Wurzel-, die Bodendecker- und die Kletterpflanzenschicht.<\/p>\n\n\n\n

In der oberen Baumschicht finden sich gro\u00dfw\u00fcchsige Obst- und Nussb\u00e4ume wie Walnuss, Esskastanie oder Kirsche. Diese liefern nicht nur wertvolle Produkte, sondern spenden auch Schatten und schaffen ein stabiles Mikroklima.<\/p>\n\n\n\n

Darunter in der niederen Baumschicht k\u00f6nnen kleinere Obstb\u00e4ume wie Apfel oder Birne wachsen. Diese werden erg\u00e4nzt durch gr\u00f6\u00dfere und kleinere Str\u00e4ucher wie Hasel, Aronia, Holunder oder Heidelbeere, die die Strauchschicht bilden.<\/p>\n\n\n\n

In der Kraut- und Bodendeckerschicht sind Gem\u00fcsepflanzen, und Kr\u00e4uter zu finden. Meist werden mehrj\u00e4hrige Arten verwendet.<\/p>\n\n\n\n

Auch die Wurzelschicht l\u00e4sst sich produktiv nutzen, etwa mit Wurzelgem\u00fcse wie Topinambur oder Meerrettich. Hinzu kommen Pilze wie Shiitake, die auf Holzst\u00e4mmen kultiviert werden k\u00f6nnen und ein interessantes Zusatzprodukt darstellen.<\/p>\n\n\n\n

In einigen Waldg\u00e4rten sind rankende Pflanzen wie Weinreben, Hopfen oder Kiwi zu finden. Sie bilden die «vertikale Schicht».<\/p>\n\n\n\n
