Bei der Aufzucht von Weidel\u00e4mmern und Jungrindern setzt er ganz auf Nachhaltigkeit.<\/p>\n\n\n\n<p>Eigentlich wollte Landwirt Stefan Schwaighofer vor acht Jahren nur den eigenen Garten wiederbeleben. Er stie\u00df dabei aber auf den Ansatz der Permakultur und setzte damit den neuerlichen Wandel des eigenen Familiebetriebs in Gange.<\/p>\n\n\n\n<p>Schon 1993, nach der Hof\u00fcbernahme durch seinen Vater Walter, besch\u00e4ftigte man sich am Hof Ellersbacher in der Stanz mit nachhaltiger Rindfleischerzeugung. Davor wurde der Hof vom Gro\u00dfvater als Milchwirtschaft betrieben. 1996 wurde man dann Mitglied des Bioernteverbands und z\u00fcchtet seitdem Jungweiderinder.
